Sally's Hatch Chile Pesto Guacamole

Ingedients: 

  • 3 ripe Haas Avocados
  • Juice of one lime
  • 1/2 jar Gracious Gourmet Hatch Chile Pesto
  • 1 bunch scallions, green part only, finely chopped
  • 1 tsp sea salt

Directions:

  1. Peel, seed and coarsely mash the avocados. 
  2. Add the other ingredients, including Gracious Gourmet Hatch Chile Pesto, and mix well without breaking up the avocados too much.
  3. Refrigerate a couple of hours to meld flavors and serve with tortilla or pita chips.
